Meet our head mixologist

Meet 'Fizz'. As an award winning mixologist, with a career spanning over 20 years of experience, his passion for the industry can’t really be disputed. Having owned restaurants and bars previously, as well as having managed and grown many, for other people, he discovered hi passion for customer interaction by entertaining guests with stories, over a quality, handmade cocktail.

Mixology has a rich history and every cocktail has its own tale to tell, and this became his passion, eventually leading to him writing extensively on the history of cocktails. If you want to know why a Cosmopolitan is served in a martini glass, or why a Long Island Iced Tea is so named, he is the man with the answers.


The Aviary Bar, in Rugby, was conceived on a personal belief that the hospitality industry lacks interesting spaces and has too many corporate experiences. In a world of basics he wanted to help create something unique, yet totally inclusive. He has been completely hands on in its creation, from the colour on the walls, the cushions on the sofas, every cocktail and beer on the menu, and every single song on the playlist.
